Preheat oven to 400 degrees. Grease pie tin. Bring water and butter to a boil in a large sauce pan over medium heat. Stir in the pancake mix, stirring until mixture leaves the sides of the pan and forms a ball. Remove from heat and beat in the eggs one at a time until well blended. Spread into greased pie pan. Bake at 400 degrees for 10 minutes, reduce temperature to 300 degrees and cook 15 minutes more until golden brown. Sprinkle with powdered sugar or top with warm fruit (apples, raspberries, etc.) and whipped cream.
Makes 1 pancake that will serve three. |
